Winter brings chill winds and rain! What better way to warm up then with a warming bowl of Goulash! A straightforward recipe that will give the cook a night off whilst giving the family a dish of comforting food.
Ingredients:
1kg beef diced or you could use shin beef
1 teaspoon of lard
1 large onion finely chopped
5 tablespoons of Paprika
2 beef stock cubes, crumbled
4 cloves garlic, crushed or grated
1 tablespoon tomato puree
1-pint water
Here is how to make this recipe:
Preheat the oven to 150 C or gas mark 2
In an oven-proof casserole dish heat the lard and add the beef, onion, paprika, 2 of the beef stock cubes and the 2 of the crushed garlic cloves. Cook until browned off. Turn down to low heat and wait 10 minutes to let the juices flow from the meat; this will start to give you a rich gravy. Now add the tomato paste, water and remaining stock cubes and garlic.
Pop the lid on and pop in the oven and cook the goulash for at least 3-4hrs, check occasionally and add water and stir if it thickens too much.
If you really want a rich goulash flavour, you can heat the oven to 110 C /Gas mark ¼ and leave in overnight.
We have served this with pan-fried celeriac a great alternative to potatoes. Though, you could choose to serve with potatoes, pasta, cabbage, or a hunk of bread and butter
