Sticky Beef Stir-Fry

This is one of those recipes that ticks all the boxes: high in protein, packed with veg, and ready in no time at all. Perfect for a busy midweek dinner, but just as good when you’re craving a weekend takeaway and trying to stay on track. Steph loves making this for her family – it’s quick, full of flavour, and always a crowd pleaser, even with fussy eaters at the table.

Ingredients (To feed 4)

Beef

  • 800g beef stir-fry strips 
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp crushed chilli flakes (adjust to taste)
  • 1 tsp salt
  • ½ tsp black pepper

Vegetables

  • 3 peppers (mixed in colour)
  • 1 broccoli, cut into small florets
  • 1 red onion, finely sliced

Garlic, Ginger & Soy Sauce

  • 2 tsp fresh ginger, grated
  • 6 cloves garlic, finely chopped
  • 2 tbsp brown sugar
  • 80ml beef stock
  • 80ml  soy sauce
  • 80ml runny honey

To Thicken

  • 2 tsp cornflour
  • 2 tsp cold water
  • Olive oil, for cooking

Optional Garnishes

  • Sesame seeds
  • Sliced spring onions
  • Chilli flakes

Method

  1. Season the beef
    Place the beef strips in a bowl and season with salt, pepper, garlic powder and onion powder. Toss well, cover and set aside while you prepare the vegetables and sauce.
  2. Prep the veg & sauce
    Slice the peppers, broccoli and red onion and set aside.
    In a small bowl, mix together the ginger, garlic, brown sugar, beef stock, soy sauce and honey until well combined.
    In a separate small bowl, stir the cornflour with cold water to make a smooth slurry.
  3. Cook the beef
    Heat 2 tablespoons of olive oil in a large frying pan or wok over a high heat.
    Add the beef in batches (don’t overcrowd the pan) and sear quickly until browned. Remove and set aside.
  4. Bring it all together
    Add the vegetables to the hot pan and stir-fry for around 5 minutes until just softened.
    Pour in the sauce and allow it to bubble gently, then return the beef to the pan and toss until everything is well coated.

Next…

Thicken & serve

Add the cornflour slurry a little at a time, stirring until the sauce thickens to your liking. Remove from the heat.

Finish & enjoy
Serve immediately, topped with sesame seeds, spring onions or extra chilli flakes if you like a bit of heat.

Tip: Serve with rice, noodles, or straight from the pan for a lighter, protein-packed option.
