Steph’s ‘Not just for Christmas’ slow roasted Gammon family dinner!

This succulent gammon is slow-cooked in a blend of apple juice, cider, and mixed spices to infuse it with incredible flavour. To finish, it’s coated in a sweet and tangy mixture of honey, mustard, and brown sugar, then quickly roasted to create a mouth-watering, crispy outer layer. 

The beauty of this gammon is its versatility – it can be served in so many ways! For a lighter, summery meal, pair it with a fresh salad, creamy coleslaw, and some buttery new potatoes. However, this time we opted for a hearty, classic Sunday roast. Steph’s chosen trimmings included crispy roast potatoes, creamy mashed potatoes, homemade Yorkshire puddings, tender carrots, indulgent cauliflower cheese, and braised red cabbage, all generously smothered in rich, savoury gravy. It’s the perfect feast for any occasion!

Ingredients (To serve 7-8)

The Slow Cooker

Gammon joint (boneless, smoked or unsmoked) (We used the 1.5-2kg size)

1 Carrot- peeled and quartered

1 Onion – peeled and quartered

3 tbsp mixed spice

500 ml Cider, dry or medium

1 litre of apple juice (depending on slow cooker size)

The Glaze

6 tbsp runny honey

3 tbsp soft dark brown sugar

1 tbsp English mustard powder (optional)

For serving:

Or you could run with the traditional serving with pineapple, or egg and lots of homemade chips. However, this time we opted for a hearty, classic Sunday roast. Steph’s chosen trimmings included crispy roast potatoes, creamy mashed potatoes, homemade Yorkshire puddings, tender carrots, indulgent cauliflower cheese, and braised red cabbage, all generously smothered in rich, savoury gravy. It’s the perfect feast for any occasion!

Method

  1. Place all the ingredients for the slow cooker into your slow cooker. Cover with the lid and cook on HIGH for 4-6 hours or LOW for 6-8 hours. If possible, turn the joint over and baste it halfway through cooking for even flavour.

2.Once the cooking time is up, remove the meat from the slow cooker and discard the vegetables and liquid.

3. Preheat your oven to 200℃ fan/220℃. Line a roasting tin with two layers of tin foil or use a disposable foil tray (this step is crucial as the glaze can be tricky to clean off your tray).

4. Remove any string and skin from the gammon (if applicable). Place the ham in the lined roasting pan and generously coat it with honey. Sprinkle the brown sugar (and mustard powder, if using) over the honey, pressing it gently into the surface. Roast for 30-40 minutes, or until the edges of the ham start to crisp and darken.

5. When you remove the gammon you will see just how soft & succulent the meat is as it will fall apart (and not allow for slicing) – use a couple of forks to pull the gammon and serve with your chosen accompaniments.
