Chilli and Mint Lamb Koftas

The BBQ has been out and looking through at what we have left we discovered some lamb burgers, gorgeous as they are, we thought we could do something a bit more special with them. So out came the chilli!

Ingredients:

Lamb Burgers pack of 4

1 tsp Chilli flakes or powder

Raitha

½ cup Greek Yoghurt

Fresh mint

BBQ Skewers

Here is how to make this Chilli and Mint Kofta recipe:

Mash the burgers in a bowl, sprinkle chilli flakes over and blend in evenly. Using your clean hands, divide the mixture into 4 and then roll out into a sausage shape. Push a BBQ skewer through and repeat with each portion.  Put these with your other items for the BBQ.

Fire up the BBQ and grill until fully cooked through and serve.

 

Make the Raitha by mixing in the fresh mint into the greek yoghurt and drizzle over your Kofta.

Serves 2 persons. We had these with a fresh salad.

 

You could make these with Lamb mince and make your own marinade, wait overnight, add chilli and continue, however, we thought you would appreciate the lazy way.

 

Confession Time: We only had mint sauce, so we just mixed that in for the Raitha The Covid-19 has stopped a few of our staples so we had to substitute!
