A very rich and indulgent meal for a special evening. Only venison or duck can hold up against such rich flavours as chilli, cherry and chocolate in a savoury dish. Luckily here at Eat Great Meat, we have some home-grown venison from the deer grazing in the field next to us.
Ingredients:
1 pack of Diced Venison or Venison steaks
For the chilli, cherry and chocolate sauce:
½ teaspoon chilli flakes or powder
1 teaspoon ground cinnamon
½ teaspoon of sea salt
1” minced fresh ginger
½ teaspoon fresh ground black pepper
2 tablespoons butter
100g bar of very dark chocolate 75% cocoa or more, melted in a bain-marie.
Pitted dark cherries
Here is how to make this recipe:
Fry the venison in some of the butter and set aside to rest
In a heavy-bottomed saucepan, melt the butter over low heat. Add the melted chocolate, stirring as you work. Add the rest of the ingredients, leaving the cherries to the last. Once you have all the ingredients in, raise the heat to heat through, but do not allow to boil.
Pour the chilli, cherry and chocolate sauce over your venison meat.
We had this with buttered asparagus.
You could have it with lemon parsley jersey potatoes, spring greens, or mashed sweet potatoes
