A quick lunchtime meal for the family, minute steaks are quick and budget-friendly, these can be cooked either on the BBQ or in a pan on the stove.
Ingredients:
Minute steaks, 1 -2 per person
1 tbsp lard or butter
Olive oil
Finely grated zest and juice 2 lime, plus juice 2 lime
Mayonnaise
Cumin 1 tablespoon
allspice 1 tablespoon
chilli powder 1 tablespoon

Sweet pepper strips (optional)
Fresh mint leaves (optional)
Chilli flakes (optional)
Salad leaves, cucumber, peppers etc
Here is how to make this recipe:
Cut the minute steaks into strips, put in a bowl, drizzle olive oil all over. Mix the spices together and then sprinkle and coat the minute steaks. As an option, slice some sweet peppers and toss them in with the beef strips. If you want some real heat, sprinkle chilli flakes over the meat too. Leave to marinade, while you make the mayonnaise mixture and prepare the salad.
Mix the zest with the mayonnaise, add some of the juice, and blend. Careful not to add too much juice or it can curdle. Mix in freshly cut mint leaves as an option.
Cut the salad leaves or lettuce into chiffon strips ( very fine) slice the cucumber and peppers etc.
At this point, you can start by heating a frying pan with oil or lard in, when hot, add the beef strips and peppers and cook until cooked through and the peppers are slightly charred.
Toast the pita pockets. When toasted, slice open.
To put together, place salad in the pita pocket, add meat and mayonnaise.
