Fry the oxtail pieces until browned all over as this will lock in the taste. Depending on the size of your dish, you might need to do this in batches! Simply remove the oxtail when done and put on a plate while you fry the rest. At the end, you’ll have all the oxtail browned and on a plate to the side.\u003c\/li\u003e\n\u003cli\u003eAdd all the vegetables to the casserole dish and cook for 4-5mins, stirring periodically to prevent burning. Add herbs and tomato purée, as well as salt and pepper and cook for another minute. Pour in the wine and allow this to bubble, still on high, for a few more minutes.\u003c\/li\u003e\n\u003cli\u003eReturn the oxtail into the casserole dish with the other ingredients and add in the beef stock.\u003c\/li\u003e\n\u003cli\u003eBring to the boil before turning the heat down so the soup is simmering. Cover and cook for 2.5-3 hours on a low heat, until the oxtail meat is falling away from the bone.\u003c\/li\u003e\n\u003cli\u003eUsing a slotted spoon, remove the oxtail pieces and leave to cool on a plate.\u003c\/li\u003e\n\u003cli\u003eStrain the soup through a sieve into a large bowl and leave to cool.
