Texel lamb, which creates our lamb henrys, has the optimum balance of fat and muscle to get the perfect texture and a superior taste. \u003c\/p\u003e\n\u003ch2\u003eHow to Cook Lamb Henry\u003c\/h2\u003e\n\u003col\u003e\n\u003cli\u003eRemove the lamb henry from the refrigerator before cooking to allow it to reach room temperature.\u003cbr\u003e\n\u003c\/li\u003e\n\u003cli\u003ePreheat your oven to 145 degrees C.\u003cbr\u003e\n\u003c\/li\u003e\n\u003cli\u003eIn a large dish, fry equal amounts of onion, carrot and celery (or celeriac), plus a bay leaf, sprig of rosemary and some black pepper, as well as a little garlic.\u003cbr\u003e\n\u003c\/li\u003e\n\u003cli\u003eAdd half a bottle of white wine and reduce by two thirds. Add 500 ml of lamb stock and reduce a little. You want the meat to fall away from the bone and therefore make sure you give them plenty of time. Here’s a guide to cooking a rack of ribs on the BBQ:\u003c\/p\u003e\n\u003col\u003e\n\u003cli\u003ePreheat the oven to 200ºC (180 fan).\u003c\/li\u003e\n\u003cli\u003eOnce the oven has reached temperature, cover the marinated ribs in foil and place on a roasting dish in the oven for 1 hour 15 minutes or until the meat easily pulls away from the bone, removing the foil for the final 15 minutes of the cooking time.
